Vegetable Curry Biryani Style

Ingredients
Canola Oil 2TbspCurry Powder 3Tbsp2 Medium Onions, sliced8 Cloves Garlic, slicedNatural Yogurt 2 Cups1/2 Cup Water1/2 Cauliflower Head, Chopped into small florettes.5 Carrots chopped2 Cups Frozen Peas5 Medium Potatoes1 1/3 Cups shredded coconut
Directions
Heat oil in deep pot and fry curry powder and garlic for about one minute, until powder and oil gets frothy and slightly smoky. Add onions once curry powder gets smoky and fry untilo onions soften. Add Yogurt and water, and stir to make sauce out of curry powder mixture. Add vegetables and coconut, and simmer for about 30-45 minutes with lid on stirring occasionally.
