15-Minute Black Bean and Corn Salsa

Ingredients
1 can black beans1 can yellow corn, or yellow and white corn1 can of Rotel1/4 cup finely chopped onionabout 3 tbsp freshly chopped cilantroa dash of lime juice (or squeeze one lime)
Directions
Open can of black beans, place in strainer and rinse off excess "juice". dump in bowl.
open can of corn, place in strainer to drain off excess water, then dump in bowl with beans.
Open can of rotel and add to beans and corn.
Add onions and cilantro and stir. Add lime juice to your taste.

I bring this to every potluck, and everyone LOVES it. It can be eaten as a "salad" like cole slaw, or with corn chips.

    Rotel is a brand name of tomatoes spiced w/ green chiles... comes in mild and hot.

    Rotel is a brand name, like Dole or Green Giant.

    I'd read somewhere (reliable) that canned tomatoes have a bad chemical in them, and that tomatoes canned in GLASS jars are better (or, of course, fresh!). I'd probably go with a jar of salsa (Herdez is good), and then throw in the extra veggies. :) - 4/10/13

    This is a delicious, healthy salsa. The fresh lime juice and fresh cilantro really make it. I might try it with a "mild" rotel next time, so it's a little less spicy. I used this to make soft tacos with grilled shrimp on whole wheat tortillas. I added fat free sour cream and low fat shredded chedder - 2/15/08
