Crockpot Salsa Chicken (low sodium)

Ingredients
Directions
1 lb. boneless skinless chicken breasts1 small can of sliced black olives1 small can of diced green chiles6 vine-on tomatoes3 jalepenos1 poblano pepper1 red onion1 can of black beas (rinsed)1 can of chicken broth
Saute dices poblano, jalapenos, & onion in a tsp of olive oil.
Drop tomatoes in boiling water for a few minutes and then set in ice water to peel off skin.
Combine all ingredients in crockpot. Cook on low for 5-8 hours. Makes 4 servings.
you can shred the chicken and use in a wrap or over rice
