Primal Twice Baked Cauliflower

Ingredients
1/2 head cauliflower (6-7" diameter)1 cup reduced-fat shredded Cheddar cheese1 Tbsp chopped chives1/2 tsp black pepper1 Tbsp salted butter1/4 cup plain low-fat yogurt2 Tbsp bacon bits1 tsp minced garlic1/4 cup reduced-fat sour cream
Directions
1. Cook cauliflower until tender (Microwave and cover with NO water added for approximately 6 minutes on high).
2. Preheat oven to 400F.
3. *Process cauliflower until smooth with a food processor. Add yogurt, sour cream, and butter and process until creamy and smooth.
4. Mix remaining ingredients together in a medium bowl.
5. Use cooking spray on 4 seven-ounce ramekins or other small oven-safe dishes and spoon mixture into dishes.
6. Place all small dishes on a cookie sheet for easier handling.
7. Bake for 15 minutes on middle rack and then **broil for a few minutes until top is golden brown.
8. Makes 4 servings

    The calorie count is off on this recipe - nutrition is based on one-half Cup cauliflower for entire recipe, rather than one-half a cauliflower. Needs to be re-worked. - 11/13/14

    sounds like a great recipe, however reduced fat and low fat and no fat are not "primal". limit your dairy but if you're going to use it use the real thing! Full fat traditional greek yogurt is delicious. - 12/12/14

    I did not mash the cauliflower I just dipped and placed it in the dish with the sauce. I put some of the bacon bit chives and all the cheese on the top. everyone loved the baked cauliflower - 7/24/20
