Ranger Cookies

Ingredients
1 c. shortening (Recipe calculated with Butter Flavor Crisco)1 c. brown sugar1 c. white sugar2 eggs1 tsp. vanilla1 tsp. baking soda1/2 tsp. baking powder1/2 tsp. salt2 c. flour2 c. rice crispies2 c. oatmeal (quick cooking, not instant)1 c. coconut1/2 c. raisins
Directions
Preheat oven to 350 degrees F.
In a large bowl, cream together the shortening and sugars. Add eggs and vanilla and beat until smooth.
In a separate bowl, combine flour, soda, salt, and powder. Add to wet ingredients and stir until well combined. This is the "glue" that will hold the cookies together.
Add rice crispies, oatmeal, coconut and raisins.
Form in teaspoonfuls onto lightly greased baking sheet, about an inch apart.

*** Please note: To get 150 from this recipe, you have to use an ACTUAL, leveled teaspoon measure. Feel free to make them larger if you wish, but the portion calculated is based on 1 tsp. each. Cookies will be about 1 1/4" in diameter.

Bake at 350 degrees F until lightly browned - 10-15 minutes.

Yields about 150 cookies!

    I made this and they are EXCELLENT. But---there is no way the recipe makes 150! I have tried twice and the most I made was 90 and they were small 2" wide at most. - 1/16/08
