Gluten free chocolate puddle cookies

2 cups powdered sugar1/2 cup cocoa (original recipe 1/2, I like extra chocolaty)1 tsp vanilla2 egg whites1 1/2 c mix-ins, I used 1 cup chocolate chips and 1/2 cup coconut sheds, but you can use a combination of chocolate chips, nuts and coconut)
1. Preheat oven to 320 degrees.
2. Combine all ingredients in a large mixing bowl
3. Drop by tablespoons on baking sheets lined with parchment paper, Silpat liners, or greased. These cookies spread as cooking. give them lots of room.
4. Bake for 10-12 min. or until puffed up and cracked on the surface.
5. Cook for 10 min. on tray before transferring to cooling racks.
