1 cup cooked bulgur1 can 14.5 ounces black beans1/4 cup plain breadcrumbs3 scallions, thinly sliced1 large egg1 large carrot, coarsely grated1/4 teaspoon cayenne pepper2 tablespoons tahini(sesame-seed paste)3 tablespoons olive oil4 whole wheat English muffins, toastedTahini MayonnaiseIn a small bowl, whisk together 1/2 cup light mayonnaise, 1 to 2 tablespoons fresh lemon juice and tahini, season with coarse ground pepper.
In a medium bowl, place beans and mash with masher until a coarse paste forms. Add scallions, egg, carrot, cayenne, tahini, bulgur and mixt with salt and pepper.
In a skillet, heat oil over medium-low until browned and firm, 5-8 minutes then serve on English muffin garnished with lettuce, tomato and tahini mayonnaise
