Pesto Stuffed Pork Chops

3 tbsp feta2 tbsp chilled pesto1 tbsp pine nuts4 pork chops1 tsp black pepper1 tsp oregano1 tsp minced garlic.5 tsp red pepper flakes.25 tsp thyme2 tbsp balsamic vinegar
Preheat oven to 375. Mix feta, pesto and pine nuts together in a bowl. Cut a slit in the center of the side of each chop, stuff with pesto mix and secure with a toothpick. In a small bowl mix pepper, oregano, red pepper flakes, garlic and thyme. Rub both sides of each chop with spice mix. Place chops in a shallow baking pan, bake for about 40 mins. Brush chops with balsamic and bake until glaze forms (about 5 mins).
