Gardein's Beefless Stew

Ingredients
1 package of Gardein's beefless tips3tbsp olive oil10oz pearl onions, peeled2 garlic cloves, minced2 celery stalks thinly sliced2medium carrots 1/2' diced3tbsp flour1/2tsp each of dried thyme and rosemary3 cups of vegan beef broth or vegetable broth1cup dry red wine, cabernet sauvignon2medium potatoes 1/2' dicedsalt and pepper for taste
Directions
Add oil to large saucepan at medium heat. Add beefless tips and brown on all sides. Remove and set aside.

Add onions, garlic, and celery to pan and saute 3 minutes.

Add carrots, thyme, and rosemary and continue cooking 3 more minutes.

Sprinkle in flour. Slowly add broth and wine while stirring.

Add potatoes and bring to boil. Reduce heat to low, cover and simmer 30minutes.

Add beefless tips back in and cook for additional 5 minutes. Season with salt and pepper and serve.

    I make this with some frequency with whatever I have on hand. For instance, tonight I had no wine in the house, so I replaced the 1 cup of wine with beer. I often substitute a whole chopped onion in lieu of the pearl onions, and this time I actually used halved baby carrots instead of the 2 chopped. - 10/28/14
