Gretchen's Coconut Ice Cream

1 cup half and half2 cups 2% milk2/3 cup sugar3 egg yolks1 tsp vanilla extract1/2 cup coconut (unsweetened) 12 nilla wafers
Put all of half/n/half and 1 cup of the milk into a saucepan. Add sugar (stir to dissolve). Add 1 tsp vanilla, coconut, and rum. Stir to mix.
In a small bowl, add 1 cup of milk and egg yolks. Whip thoroughly. Add slowly (while mixing) to mixture in sauce pan. Combine completely.
Heat mixture until it reaches 175 degrees and remove from heat.
Put mixture into glass bowl and place in freezer. Chill COMPLETELY. (about 45 minutes).
Pour chilled mixture into ice cream maker. When the cycle is complete, add crushed nilla wafers. mix thoroughly. Put into freezer safe container and freeze for 2-3 hours minimum to set ice cream.
