2-Avocados, California (Haas), 2 fruit without skin and seeds 1 lg Red Ripe Tomatoes, 1 cup, chopped1 Onion medium (2-1/2" dia) 1- Jalapeno Pepper Small, seeded, 3/4 cup Cilantro1 tsp lite salt1 tsp black pepper1 lg Lime Juice
In a bowl, combine all ingredients except avocado. Set aside so flavors meld. Cut avocados in half long ways. Remove and save pit. Scoop out fruit from shell and place into a separate bowl. Mash with a fork until desired consistency is reached. Mix other ingredients with avocado. Place pits back into bowl to slow the "browning" process of the avocado. Serve with chips or Baked Scoops.
