Emelia's French Onion Soup

onionschicken brothbeef broth extra virgin olive oilparmesan for serving (not calculated)salt and pepper
Cut up all of your onions.
To your soup put 1 tablespoon of olive oil. You could use 1 tbsp of your chicken broth if you don't want the extra calories.
Add onions to pot. Sautee until golden brown and carmelized.
Reduce heat. Pour in 14.5 ounces each of chicken and beef broth. Let soup some to a boil so flavors can comingle. Soup is ready to serve.
I like to top mine with an ounce of French bread and parmesan under the broiler, but I also just like the cheese on top. :)
