Pork Cacciatore

1/2 to 3/4 lb country style pork ribs or pork shoulder cooked in a slowcooker over sliced onions until tender and shredded, visible fat removed. (I use half for this and half for BBQ pork sandwiches)1 tbsp olive oil1/2 onion diced1 yellow pepper sliced into strips and then into thirds1/2 lb sliced mushrooms14 oz can San Marzano style tomatoes and juices1/2 cup red wine1/2 tsp ground black pepper1 tsp minced garlic1 tsp marjoram1/2 tsp oregano1/2 tsp crushed rosemary1/2 tsp thyme1 can low sodium garbanzo beans, drained and rinsed2 tbsp capers, drained and rinsed (optional)
Heat olive oil in deep sautee/everyday pan.
Add onion, yellow pepper and mushrooms, cook until mushrooms are browned a bit, adding the juices from the tomatoes if the mushrooms absorb too much of the oil.
Add the pepper and herbs. Stirring until incorporated.
Deglaze the pan with the red wine, keeping the vegetables in.
Crush the tomatoes in hand over the pan, adding the pieces as they fall.
Add the shredded pork and garbanzo beans, continue cooking until thoroughly heated through and the beans have a texture that you like.
Turn off the heat. Add capers, if desired.
Serving Size: makes 4-6 cups
