Healthy and Tasty Meatloaf

Ingredients
500 gr Extra Lean (5% fat) minced Beef115 grams (1/2 can drained) Green Lentils1 small Onion, chopped finely65 gr pre-cooked Pearl Barley2 large Eggs1 tsp / 2 gr Chilli Powder or chopped Chillies to taste20 gr chopped or minced Garlic (about 4 cloves)150 gr Chargrilled Mediterranean sauce 2 Tbls / 16 gr ground Flaxseed ** optionalFreshly ground Pepper to taste
Directions
Boil 75 gr raw barley as directed; rinse with cool water and drain well

Combine all ingredients together and mix well. If mix is very wet, you can add some breadcrumbs or crushed cracker to help soak up excess liquid

Place meatloaf mixture in a bread loaf pan and lightly press to ensure mix is firm

Bake in a 400F / 200C oven for about 40 mins or until fully cooked (internal temp of 160)

Serve with salad or vegetables and/or potatoes

Serving Size: each serving is 1-1 1/2" thick slice
