1-1/2 Cups natural bran1 Cup all purpose flour1/2 Cup packed brown sugar1-1/2 Tsp baking powder1 Tsp ground cinnamon1/2 Tsp baking soda1/4 Tsp ground nutmegPinch salt (optional)2 Large eggs1 Cup unsweetened applesauce (1 large tart (Spartan) apple washed remove seads, chop - cook in microwave for 3 minutes - let cool before using - note do not peal).1/2 Cup Plain - low / 0 fat yogurt1/2 Cup butter melted or vegetable oil1-1/2 Cups fresh / frozen blueberries - no need to thaw
Preheat oven to 400 F (200 C)
Prepare 12 cup muffin pan - lined with paper liners
Whisk together dry ingredients in one bowl
In another bowl beat together liquid ingredients
Make well in dry ingredients and add liquid ingredients
Stir until just combined
Gently stir in blueberries.
Spoon into muffin pan.
Bake for 15 - 18 minutes or until a tester inserted in the centre of muffin comes out clean.
Serving Size: Makes 12 Muffins at 202 calories
