Chocolate Soy Cream

2 cups soy milk1/4 cup cocoa powder80g sugar (brown or granulated)1 Tbsp cornstarchpinch of salt1 tsp vanilla extract
Whisk together soy milk, cornstarch, and cocoa in a sauce pan.
Turn on heat and once the mixture is smooth add sugar and salt, and whisk until smooth. Bring to a bare simmer, enough to activate the cornstarch, and remove from heat. Let cool and stir in vanilla.
Refrigerate until chilled, possibly 4 hours or more. Prepare in your ice cream maker as per its directions, probably 20-30 minutes.
Serving Size: makes 4 3/4 cup servings
