Zucchini Muffin

Ingredients
1 1/2 cups whole wheat flour1/4 cup brown sugar1 teaspoon baking soda1 teaspoon ground cinnamon1/2 teaspoon salt1 egg, lightly beaten1/4 cup vegetable oil1/4 cup milk1 tablespoon lemon juice1 teaspoon vanilla extract5/8 cup applesauce1 cup shredded zucchini (press out excess liquid)
Directions
Mix the dry ingredients in a bowl.
Mix the wet ingredients in a bowl (vanilla last), and then add the zucchini.
Mix the wet ingredients into the dry ingredients.
Transfer into muffin cups and bake at 350 for about 15-25 minutes.
