Hardy Chicken Quinoa Soup

2 cups cooked cubed or shredded chicken1 cup chopped carrots1 cup chopped celery1 cup chopped mushrooms1/2 cup chopped onion1/2 bag of frozen peas, thawed1/2 bag of frozen broccoli, thawed2 Tbs olive oil1 Tbs unsalted butter2 cloves minced garlic6 cups low sodium chicken broth2 cups water3/4 cup uncooked quinoa1tsp thyme1 tsp basil
Saute carrots, onions,and celery in oil and butter over medium heat about 5 minutes. Add mushrooms and garlic, saute an additional 5 minutes. Pour broth and water into large pot, bring to a boil. Add in sauteed veggies, broccoli, peas, quinoa, basil, and thyme. Continue boiling for 30 minutes. During last 5 minutes add in cooked chicken. Serve hot.
