Lentil Soup

Ingredients
Ingredients:1 Tablespoon Olive Oil1 Medium Onion1 Medium Red Bell Pepper2 Large Carrots1 Medium Sweet Potato1 Medium Tomato4 Cloves of Garlic6 Oz. Applegate Farms Organics Uncured Ham4 Cups Beef stock1/4 Cup Tomato Paste1/2 Cup Dry Red Lentils2 Tablespoons Red Curry powderSalt and Pepper to Taste
Directions
1.) Simmer the lentils in water until just tender.

2.) Brown the Ham and set aside.

3.) Brown the Onion and the Pepper in the Olive Oil. Add the Garlic and Curry Powder and Sautee for 2 minutes.

4.) Meanwhile Chop the remaining vegetables.

5.) Combine the remaining ingredients and simmer for about 30 minutes until the potato and carrot are tender and the flavors have combined.
