Mashed Cauliflower

Ingredients
I head of cauliflower4 tablespoons butter1/4 cup 1% milk salt and pepper to taste
Directions
Boil cauliflower until a fork inserts easily. Remove from pot and drain throughly. Mash cauliflower with a fork or back of spoon to break it down. Put in a food processer (This is imperative in order to get the creamy texture). Add butter, milk salt and pepper. Mix until very finely pureed.

Serving Size: makes approximately 5 cup servings
