Vegetable Frittata

Ingredients
6 eggs1/2 c unsweetened almond milk1/4 c feta cheese4 Tbsp grated Parmesan cheese1 small onion, diced6 cherry tomatoes, halved1/2 c button mushrooms, sliced1 small potato, diced1 small zuccini, sliced thinly2 cloves garlic, mincedsalt and pepper to taste1/2 tsp crushed red pepper
Directions
Preheat oven to 375 F and lightly grease a 9 in. pie pan with cooking spray. Place potato, mushrooms, and zuccini in a microwave-safe bowl with 1/2 cup of water and heat for 5 minutes; drain well. Beat eggs, almond milk and seasoning in a separate bowl, add vegetables, garlic and feta. Mix well and pour into greased pie pan. Top with Parmesan and bake 30-35 minutes or until egg is cooked through.
