2-3 sprays of Pam cooking spray2 Tbsp. bell pepper, chopped (small)1/4 cup onion, chopped (small)70g (about 2.5 oz) precooked potatoes, cubed1 egg, whole1 egg white1-2 tsp water1/2 oz cheddar cheese. shredded
Spray small skillet with cooking spray. Heat pan over med. heat until warm. Add peppers and onions. Cook until soft, about 5 min. Add potatoes and cook until heated through, about 5 min.
In small bowl, combine whole egg, egg white and 1-2 tsp. of warm water. Whip with a fork until frothy and add to pan. Stir the mixture constantly with a rubber scraper, making sure to scrape the bottom clean. The eggs will cook very fast. Add Pepper, salt, and garlic powder as you are stirring.
Move entire mixture to plate and sprinkle cheese on top.
