Chicken Vege Melange

Ingredients
1/2 Spaghetti SquashCherry tomatos1 medium onion1 green pepper3-4 chicken breasts1 tbsp rice vinegar1 tbsp olive oil2 tbsp butter1 package fresh mushrooms
Directions
Place the veges in a pan to roast. In the same oven, place the chicken breasts after coating them in the rice vinegar/olive oil for a marinade. Roast all 1 hour.
Sautee the mushrooms in butter.

Cut up the roasted chicken and vegetables into bite size portions. Mix all ingredients in large bowl. Divide out into 4 portions. Freezes well.
