beets w/almonds and pomegranate vinaigrette

Ingredients
BeetsAlmondsFennelFigsCarrotExtra Virgin Olive OilPomegranate JuiceCider VinegarDijon MustardsS&P
Directions
Boil Beets then slice into thin strips, roast almonds, shred carrot, slice figs, thinly slice fennel. Toss above items together.
In blender add Pomegranate Juice, Mustard, Vinegar, Garlic, S&P and mix...slowly add your oil, toss with vegtables and serve
