Ingredients
3 large chicken breasts2 T. EVOO1/2 T. each - salt & pepper4 oz. goat cheeseSAUCE:2 T. Butter1 T. each - finely copped garlic & onion1/2 c. dry white wine1/4 c. freshly squeezed lemon juice10 T. cold unsalted butter, cut into small peices3 T. fresh chopped basilsalt and pepper to taste
Directions
Prepare the Sun-Dried Tomato Sauce: Place butter onion and garlic in a skillet over medium heat and saute until transparent and tender. Add white wine and lemon juice, increase heat to medium high and simmer to reduce by half. Reduce heat to low and add cold butter one peice ata time. Add tomatoes, basil, salt and pepper and stir to blend. Set aside.

brush chicken with olive oil and sprinkle with salt and pepper. Grill chicken until cooked through about 15-20 minutes. divide goat cheese evenly between breasts, placing on each breast for the last 2 minutes of cooking. Place on a serving platter and spoon sauce over.
