2 cups cooked brown rice (cooked w/ .5 tsp salt)4 cups milk (I used 1/2 plain soy milk, half 1.5% milk)2 Tbsp sugar2 Tbsp honeycinnamon (1 tsp ground and/or cinnamon stick)1 tsp vanilla (or 1 vanilla bean)nutmeg, allspice, or cardamon (total 1 tsp).5 cup raisins or dried cherries (or other dried fruit)- Optional
stir milk, sugars, and spices together until at a low boil (stir often to prevent scalding). Add rice, butter, and raisins. Stir often for 20-40 minutes until desired consistency. Let cool and serve at room temp.
