Ingredients
Eggplant, fresh, 1 eggplant, unpeeled (approx 1-1/4 lb (remove)*Classico Sweet Basil Marinara, 1 cup (remove)*breadcrumbs - italian style, 0.25 cup (remove)*Cheese, 365 All Natural Grated Parmesan Cheese (1 Tbsp), 2 serving (remove)Egg, fresh, 2 large (remove)*2 tsp Italian Seasoning, 1 serving (remove)*Parsely, raw 1 Tablespoon, 1 tbsp (remove)
Directions
Slice eggplant season with salt and pepper
dip in flour shake off excess
dip in egg mix then bread crumb mix
bake at 375 on slotted pan for 15-25 mins flip if needed
top with tomato sauce mozz cheese and fresh parsley
