Cauliflower Mash

Ingredients
Whole head steamed cauliflower1.5 tbls sour cream1 oz gruyere cheese, grated1 tsp herbs de provencesalt and pepper to taste
Directions
Steam cauliflower until fork tender. Remove from heat and place into pot over low heat. Add all other ingredients, mashing by hand until you reach the consistency that you want. Makes 4, one cup servings.
