Chicken Lasagna

Ingredients
3 lbs chicken breast, pounded flat2 TBL Olive Oil2 10 Oz. packages frozen spinach, thawed, squeezed dry1 14 oz. can of Artichoke hearts, drained8 oz Ricotta Cheese1/4 Cup Italian Three Cheese Blend2 tsp Garlic and Herb Mrs. Dash1 tsp OreganoFresh garlic to taste, smashed32 oz. low sugar marinara sauce
Directions
1. Preheat oven to 350 degrees.

2. Pound chicken breast flat with a mallet.

3. Grease 13 x 9 glass baking dish with 2 TBL of olive oil

4. Place 1/2 cup marinara sauce in the bottom of the pan. Cover with 1/2 of the chicken breast.

5. Mix Spinach, artichoke hearts, ricotta cheese, three cheese blend, Mrs. Dash, oregano and garlic in a separate bowl. Spread over chicken.

6. Cover spinach layer with remainder of chicken.

7. Cover with marinara sauce. Bake at 350 until internal temperature reaches 170 degrees.

    I substituted with both low fat Ricotta shredded Italian cheese to reduce the overall cholesterol and fat grams. It was yummy and a hit at dinner. - 8/12/13
