Ingredients:*Summer Squash, 2 cup, sliced(remove)*Peppers, sweet, red, fresh, .5 cup, chopped(remove)Yellow Peppers (bell peppers), 5 strips(remove)Onions, raw, .5 cup, chopped(remove)Olive Oil, 1 tbsp(remove)Chicken Breast, no skin (roasted), 4 ounces(remove)Cottage Cheese, Nonfat, .5 cup (not packed)(remove)Mrs. Dash (R) Original Blend, 2 tsp(remove)
Sautee in the olive oil, the peppers and onions until soft. Add the spaghetti squash until heated through. Add the chicken and simmer until heated through. Sprinkle Mrs. Dash over (you can add more or less to your taste). Stir in the cottage cheese and place in a prepared pie pan. Bake for 30 minutes in a preheated 350 degree oven.
