Acorn Squash w/Curried Apple Compote

Ingredients
1 acorn squash2 apples peeled and diced5 Tbsp Earth Balance Butter1 Tbsp curry 1 Tbsp pumpkin pie spice1 onion chopped finely1 Tbsp brown sugar1/4 golden raisins coarsely chopped3/4 c apple cider
Directions
Cut squash in half, scoop out seeds. Cut small slice of top and bottom off so squash sits flat in pan. Place in a glass pan with about 2 Tbsp of water, cover with foil and roast for 30 minutes at 350 degrees. Remove and set aside to cool. Melt 1 Tbsp butter in skillet, add onion cook for about 10-12 minutes until soft. Add curry, pumpkin pie spice, apples, chopped raisins and cider. Cook about 6 minutes until liquid evaporates. Cut cooked squash into 6 rings, place on foil lined cookie sheet. Pile apple mixture into hole of squash (about 1/4 cup). Melt remaining butter in a pan and add brown sugar. Drizzle each squash with butter and brown sugar. Bake for 15-20 minutes until hot and cooked through.
