1 bag frozen carrots2 bags frozen bell peppers & onions6 cloves garlic, finely minced8 boneless skinless chicken breast halves (about 4 pounds)4 tsp. ground ginger2 tsp. salt1 tsp. pepper16 ounces orange juice concentrate3 cans Mandarin orange segments, undrained6 cups hot cooked rice
Put carrots, bell peppers, onions, garlic, then the chicken, ginger, salt, pepper and frozen orange juice in crock pot. Cover and cook on LOW 4 to 6 hours. Serve chicken on hot cooked rice on platter. Top with orange segments.
