Fresh Vegetarian Homemade Spaghetti Sauce

Ingredients
* Red Ripe Tomatoes, 32 medium whole (2-3/5" dia) * Poblano Pepper, .25 cup * Onions, raw, .25 cup, chopped * Mushrooms, fresh, 1 cup, pieces or slices * Garlic powder, 2 tbsp * Oregano, ground, 3 tbsp * Basil, 3 tbsp * Olive Oil, 1 tbsp * Pepper, black, 1 tsp * *Lemon Juice, .125 cup
Directions
Make this even better by using organic vegetables.

Peel tomatoes, remove seeds and squeeze out excess water.

Combine everything in a big pot and simmer all day (4-6 hours) until desired consistency.

To shorten cook time cut the tomatoes down into smaller pieces.

Serving size: 1 cup

    I cooked this all in a crock pot. Cooked the onion and pepper in a pan until the onions were golden and then threw it all in the crock pot on low for all day cooking. It is wonderful! - 9/18/08
