Savory Butternut Squash Casserole

Ingredients
3 cups butternut squash, chopped1 lg onion, chopped2 TBSP butter, melted1/2 tsp salt (optional)1/4 tsp pepper2 whole eggs3/4 cup fat free milk3/4 cup ricotta cheese
Directions
1. Preheat oven to 375. Coat a lg baking dish with non stick cooking spray.
2. Peel squash, cut in half, remove seeds chop into lg bite size pieces. Toss with salt and pepper and melted butter. Place in baking dish.
3. Bake squash for 30 min. In mixing bowl beat eggs and cheese, pour over mixture return to oven for another 20 min or until golden brown.
