Microwave Bread Pudding

4-5 slices of bread (4 cups),cubed,packed1/2 cup Brown sugar1/2 cup raisinscinnamon, to taste2 cups skim milk2 eggs, beaten2 teaspoons vanilla
Put bread in a 2-qt casserole dish. Sprinkle with brown sugar,raisins & cinnamon.
In microwave safe measuring cup microwave milk,margarine & vanilla for 4 minutes on high.
Beat the 2 eggs.
When milk mixture is heated RAPIDLY stir eggs into milk mixture. (I use a whisk and pour and whisk very fast)
Pour milk/egg mixture over bread in casserole.
Microwave on medium-high for 9-12 minutes.
Serve warm or cold. Enjoy!
