Grilled or Roasted Vegetables

Ingredients
eggplantgreen beansmushroomsonionsasparagusred, green & yellow peppersgarlicmintcilantroolive oilbalsamic vinegar
Directions
Slice all vegetables into desired size and then use some of the oil to lightly coat by either brushing or tossing. Roast in oven or grill on bbq. Chop garlic, cilantro and mint, add to remaining oil and the balsamic vinegar. Mix and add to vegetables. Allow to marinate overnight so that flavours will mix.
