Sesame Ginger Salmon Salad

Ingredients
Poached SalmonSesame OilGingerRice Wine VinegarGarlicShallotsHoneyMushroomsBean SproutsSpinachAsparagusS&P if desired
Directions
Poach Salmon fillets and flake apart (15mins +/- in steamer). heat 2 tablespoons oil in large skillet and sautee sliced mushrooms, asparagus (2 inch sticks), and sprouts for 5 minutes. Add flaked Salmon and Fresh Spinach to skillet and stir (spinach will cook with heat from veggies). In blender add: Ginger, vinegar, garlic, shallots, honey (S&P) and mix: slowly add in oil. Add dressing to skillet and mix. Serve warm or cold.
