Canned Black Beans, rinsedCorn TortillasBell Peppers (green, yellow, red, whatever you like)Egg WhitesItalian Blend Cheese shredded or low-fat cheeseEVOO
Slice or chop bell peppers. Put 1t EVOO in pan and add bell peppers & salt & pepper, cook to softness of your liking, add egg whites and stir until whites begin to cook, add black beans until whites are cooked. Turn of heat and add 2T of cheese and stir in to melt. Warm torts however you like (I use my George Foreman Grill). Spoon black bean & egg white mixture on top of tortillas!
