Chicken Sausage with Quinoa

Ingredients
1 tsp olive oil1 cup chopped onions10 medium fresh mushrooms, sliced2 links Nature's Promise spiced apple chicken sausage, sliced into discs1/2 tsp ground cinnamon1/2 tsp ground thyme1/2 cup dry quinoa1 cup water
Directions
Prepare quinoa as directed on package, set aside.

Heat olive oil in large skillet. Add onions, garlic and mushrooms; saute 10 minutes. Add sausage discs and cook until sausage has browned, about 15 minutes.

Stir in cooked quinoa, cover and simmer 5 minutes.

Makes 2 - 12 oz. main course servings or 4 side dishes. Nutritional info is for 2 servings.
