Italian Roasted potatoes

2 lbs small red potatoes2 medium red bell peppers1-2 tbsp itallian herb mix.5-1 tbsp PaprikaPepper to taste1/4 cup Olive Oil (may use less if preferred, but can be hard to coat all potatoes for roasting)
Cut potatoes into quarters (aprx 1" wide wedges)
Cut peppers into 1" chunks
Mix together oil and herbs.
Spread potatoes and peppers on a baking sheet, and pour oil and herb mixture over potatoes. Mix well to coat. If preferred, you can mix in a bowl then spread on sheet.
Place baking sheet in oven under the broiler on high for 20 mins or until tops of potatoes brown and potatoes are soft through.
