Pesto Stuffed Chicken Thighs with Spinach & Cottage Cheese

Ingredients
boneless, skinless chicken thigh1 tablespoon basil pesto1/4 cup spinach leaves sliced1/4 cup cottage cheese (2% used in recipe calc)1 tsp shredded parmasan
Directions
Preheat oven to 350 degrees

Open chicken thigh and spread with pesto. Top with spinach and cottage cheese and fold closed. Sprinkle with parmasan.

Bake for 30 minutes or until chicken is cooked through.
