Mini Omlettes

Ingredients
9 fresh eggs beaten with seasonings of your choice3/4 cup hashbrowns (frozen with onions and peppers)3/4 cup diced ham (optional)1/3 c 2% shredded cheese ( I used three cheese Italian)
Directions
Spray 12 muffin tin with light cooking spray and sprinkle small amount of hash browns in bottom of each muffin cup. Do the same with ham and cheese. Beat eggs with teaspoon of water, salt, pepper, onion and garlic powder and parsley. Pour into each muffin cup leaving about 1/4 inch to top. Bake at 350 for 15-20 minutes(varies depending on oven) or until toothpick inserted comes out clean. Can be frozen in baggies, great for brunch.

    Mine turned out rather watery. And they didn't brown up very well. I even left them in the oven for an extra five minutes. I think maybe I might add 1 more egg. The over all concept (freezing etc) is excellent! - 3/6/11

    These are great and very filling. I like the idea that you can freeze these for a later time also. Easy meal. - 4/23/08
