1 small butternut squash (approx. 1 lb)1/2 yellow onion1 cup dried cranberries1 small granny smith apple diced1 cup walnuts chopped1 persimmon diced3 stalks celery diced1/2 tsp ground cumin1 tbsp fresh dill1 tsp cinnamon1 tbsp coconut oil
Preheat oven to 350
Place raw butternut squash in food processor, pulsing until shredded. Put in greased baking dish with all remaining ingredients.
Toss to evenly distribute spices.
Sautee onion in pan until translucent.
Add onion to baking dish
Bake covered 45 min.
