Salmon Cake

Ingredients
2 baked potatoes (450 gr)300 gr pumpkin420 gr canned salmon - drained (2 small cans) 1/2 Red Bell Pepper- chopped fine1 tbsn Caper - drained1/2 Jalapeno Pepper - chopped fine1/2 Lemon (zest - chopped fine and juice)1/4 C Fresh dill1/4 C Italian Bread crumbs1 Egg large
Directions
1- Cook pumpkin and potato. Combine all ingredients in a large bowl (I use the food processor for the peppers, capers, dill and salmon - then in a second batch I puree the potatoes and pumpkin before mix all together in a large bowl). Form patties into 150 gr portions...
2- Spray a cookie pan. Cook the patties at 350F for 20 min and broil for 3-4 min per side until golden.
3- Serve and enjoy!
