2 cups Almond Meal Flour 2 tblsp of coconut flour 2 tsp. baking Soda2 tsp. organic Cinnamon Organic Spices ¼ tsp. each organic Allspice and Cloves 1 cup virgin Coconut Oil 1 c cup coconut sugar 1 tsp. organic Vanilla Extract or flavor 3 cups grated Carrots dash of salt 4 Eggs icing 8 ozs of cream cheese 1 tsp vanilla 1 tblsp of Maple syrup1/2 cup walnuts
Preheat oven to 350 degrees. Grease and flour 9x9x2'' pan.
Mix together: Almond Meal or Flours, Baking Soda, Cinnamon, Salt add oil sugar and Vanilla Extract Add grated Carrots, then Eggs, one at a time, beating well after each time.
Bake 30-40 minutes. or till done. Cool and cover after five to ten minutes to maintain moisture. You can frost with Cream Cheese frosting ... Yum!
Serve warm if not frosted, or at room temperature with Cream Cheese frosting.
