Vitamix Delicious Cream Of Mushroom Soup

Ingredients
1/2 yellow squash1/2 small sweet onion1-2 cloves garlic 12 oz of any kind of any combination of mushrooms1 1/2 Tbs. Butter3/4 tsp. Sea Salt
Directions
Steam all of the veggies, using about 2 1/2 cups of water.

Pour the veggies and the steam water into the vitamix, add the butter and salt, blend until creamy. If too thick, add water as necessary to achieve the desired consistency.

If desired, reserve some of the steam mushrooms, and add them in at the end, blending at the slowest Vitamix speed for just a few seconds, to add texture to the soup.


Serving Size: Makes two servings, approx 2 to 2-1/2 cups each

    Super good! I really didn't steam the vegetables, just the mushrooms. Used an entire yellow squash, added some white wine, chicken bullion, and thyme. Let it go in the vitamix for about 6 minutes then kept some mushrooms to pulse at the end for texture. Threw in some parsley too. - 9/19/15
