Mods for Turkey Meatloaf, Spinach & Mozzarella Stuffed

Ingredients
Italian Seasoned Ground Turkey by Jennie-O 93/7, 1.25 lbsMcCann's Steel-Cut Irish Oatmeal ,1/4 cup dryPesto sauce, 1 tbspFresh baby spinach, 2 cupsChili powder, 1.5 tspGarlic powder, 1 tsp Mozzarella Cheese, part skim milk, shredded, 4 oz + 3 oz
Directions
Preheat oven to 350 degrees.

Combine the ground turkey, oatmeal and onion, 1/3 cup of sauce or 1 tbsp pesto, and remaining ingredients (except cheese and spinach) in a large bowl.

Take half the meat mixture and spread in a bread pan.
Layer Spinach and 4 oz of cheese.
Layer the remaining mixture on top of spinach and cheese.

Cover with remaining cheese.

Bake covered with foil for 1 hour.

Serving Size: makes 4 generous servings
