makes 16 1 cup servings
In a large pot add oil until hot, add flour and cook over low heat until golden brown to make a roux. Add the onions, celery, and peppers, cook for 10 minutes. Add water, turn up heat to high and bring 2 a boil. Turn heat down to moderate heat, and continue to cook, add seafood and all other ingredients and simmer for 1 and 1/2 hours stirring occassionally to prevent sticking (do not use a whisk, it will break up all the seafood) Use a wooden spoon or plastic spatula and fold as you stir. After 1 1/2 hours add salt and pepper and continue to simmer for 15 minutes. Pour in container, label, date, and refrigerate.
