Veggie Pizza on Pita Bread

Ingredients
Bread, pita, whole-wheat, 1 pita, large (6-1/2" dia) Ranch Dip, lite, 4 oz Mushrooms, fresh, .125 cup, pieces or slices Scallions, raw, 4 tbsp chopped Carrots, raw, .125 cup, grated Cucumber (with peel), .125 cup slices Broccoli, fresh, .125 cup, chopped Cauliflower, raw, .125 cup *Colby and Monterey Jack Cheese shredded, .125 cup
Directions
Cut the pita in half - where you have 2 round sections. I consider this to be 8 servings. I just love it. Obviously, substitute your favorite veggies. You could add bell pepper if you like. I am also going to try this with a "fruit" pizza. With low fat cream cheese and cool whip then add the fruit. Might need to add a little splenda to the cream cheese and cool whip. Don't know yet.
