-2.5 lb bag baby spinach-0.5 cup long grain rice-1 15 oz can tomato sauce-1 medium onion-2 tbs extra virgin olive oil-2 cups water-Salt & pepper to taste
-Saute onions in olive oil over medium heat until translucent
-Add: Tomato sauce, spinach, rice, water, salt & pepper
-Cover and simmer on low heat for 45 minutes (stirring every 10-15 minutes), then remove cover and reduce to thickness desired
-Serve hot or cold
